My Version of Huevos Rancheros

Tuesday morning I decided to use the leftover black beans from the fish tacos I had for dinner the night before and make my version of Huevos Rancheros.  The ingredients I used are listed below.

Mission White Corn Tortillas

Seasoned Black Beans (see my Fish Taco Recipe)

Scrambled Eggs

Green Onions

Kraft Mexican Blend Shredded Cheese

Taco Sauce

Vegetable Oil

This recipe was very simple to put together. I heated a table spoon or two of vegetable oil in a skillet, then warmed four corn tortillas  (I like to double them up) in the oil. After that I scrambled two eggs and spooned the eggs and the seasoned black beans from last night onto the tortilla shells. I then topped them with cheese, green onions, and taco sauce. Easy peasy breakfast, Enjoy!
